I was so excited when these were gobbled down by B1 and B2. I first tried them when they were coming out of their unwell period, after they hadn’t eaten much at all for days.
I am happy to report that it wasn’t just a fluke or just because they were so hungry they would eat anything, once they felt a little better. They have had them a few times now and they have been a success each time.
They’re super easy and quick. I have a new go-to recipe.
1 cup of cooked mixed vegetables (frozen is fine)
1 cup cooked corn kernels
1 cup self raising flour
1/2 cup milk
1 cup grated cheese, plus a small hand full to sprinkle on top
1/2 onion finely chopped
1 210g can tuna in spring water, drained
Preheat oven to 200˚c
Mix all ingredients in a bowl.
Place mixture in a greased baking dish or slice tray.
Sprinkle a hand full of cheese over the top.
Cook for approx 40 mins or until golden on top.
