Sunday Sweeties Recipe Linky – Getting Messy

This is a favourite Summer dessert of mine. I’ll be making it when my Aunty visits next week. Here’s how I make it:

Eaton Mess

1 sml tub whipping cream
1 cup frozen raspberries
1 packet of small meringues
1 tbs icing sugar

Whip the cream until stiff.
Pop the raspberries in the microwave until defrosted and slightly warm. Mix icing sugar in with the raspberries, mooshing them up a bit as you go.
Crumble the meringues into rough pieces.

Find some nice high glasses and layer the cream, raspberry mix and meringues until you reach the top of the glass. Pour any remaining raspberry mix and place some more crumbled meringue over the tops of each.

Oh boy. Simple and delish.

    Gaah! that looks so goood! I am going to have to find something that tastes that good, but low in fat and sugar! Why did I start to diet today lol.

      Oh, Alicia, this one is definitely not on the diet. I need to slow down on the sugar too.
