{Recipe} Mini Ham and Pea Frittatas

I was feeling inventive today so I threw these ingredients into a bowl, mixed them up and made these tasty toddler sized frittatas. My one regret is not lining the bases of the muffin tray with baking paper as they stuck a little (and I had a feeling they would).

Dora’s response to these were “Mmmm, mmmm, mmmm!” They got a big thumbs up from her.

Makes 6 (but of course you could double the ingredients to make a dozen).

2 eggs, whisked
2 tbs of cottage cheese
1 handful of chopped fresh parsley
50g leg ham, chopped
1/4 cup of peas (I used frozen)
2 tbs milk
1/4 cup cheddar or tasty cheese plus some extra to sprinkle on top

Preheat oven to 200˚c. Add all of the ingredients to the whisked eggs and combine well. Line 6 holes of a 12 hole muffin tray with baking paper and divide the mixture evenly between those 6 holes. Sprinkle extra cheese on top of each. Cook for 15-20 minutes or until golden.

    These look super good for the kiddies, we have friends staying at the moment so there are five kids in the house. I might have to give these a go for dinner tonight.
