Wholemeal Pumpkin, Cinnamon and Cranberry Rockcakes
I made these beauties this morning.
Very easy and quick to make. B1 and B2 are both enjoying one right now for afternoon tea.
Ingredients:
2 1/2 cups of wholemeal self raising flour
pinch of salt
2 tablespoons of butter
1 cup of milk
1/4 pumpkin cooked and mashed
A good sprinkle or 2 of cinnamon
2 good hand fulls of cranberries
Method:
In a mixing bowl place flour, cinnamon and salt. Rub in butter.
Add milk, make into a dough.
Add pumpkin and cranberries and mix through.
(you may need to add a little more flour to get the consistency of the dough right depending on how much water was retained in your pumpkin)
Dust your chopping board or bench with flour and roll out your dough to approx a 2 cm thickness.
Cut into the size and shape you want. (I made a few square and a few round ones. Some big, some small)
I also placed one or two cranberries on top of each one.
Place on a greased tray and place in a preheated oven for approx 15- 20 minutes.
Enjoy!

I also am always on the lookout for things without a heap of sugar or butter ect.
Especially for myself and the twins. Hubby, well he eats anything and everything but has the metabolism of a giant.
