{Recipe} Baked Potato with Spinach and Cheese Filling
I came across this recipe ‘Baked Potato with spinach and cheese filling’, while searching for ideas for things to make for B1 and B2. It was in the toddler section of recipes but straight away I thought of my husband who I knew would love it. I decided to give it a try, mainly for hubby for dinner and/ or to take to work for lunches, and I thought I would also give some to the twins to try.
I added a few extra ingredients to the original recipe that I found. I also left out the walnuts.
Ingredients:
4 large potatoes scrubbed clean
Cooking spray
40gms Butter
2 Tablespoons plain flour
2 cups milk
1 and 1/2 cups grated cheese
A bunch of spinach roughly chopped
2 mushrooms
1 tomato
Method:
Pre-heat oven to 200˚c.
Prick each potato several times with a skewer (I used a knife).
Spray each potato lightly with oil.
Bake in oven for approx 45 minutes or until tender.
Allow to cool. Cut each potato in half length ways and scoop out the flesh leaving a 1/2 cm shell. Lightly spray inside of the potatoes with oil and return to the oven. Bake for 15 minutes or until crisp and golden.
Melt butter in a saucepan over medium heat. Add flour stirring constantly. Remove pan from heat and slowly add the milk, stirring constantly. Return to heat and stir until mixture comes to the boil. Add half the cheese and stir until melted.
Dice mushrooms and tomatoes. Add to cheese sauce mixture and stir in.
Place spinach in a bowl of boiling water for 1 minute. Rinse under cool water, then ring out excess water with hands. Stir spinach into sauce mixture.
Roughly mash potato flesh and add to the sauce.
Spoon mixture into potato shells and sprinkle with extra cheese.
Bake for 10 minutes or until golden.

I see so much potential with these. They could be a snack, a main meal or a side dish. You could also add other ingredients such as ham, bacon, tuna, chicken, or even salmon. You could add other vegetables like capsicum, onion, grated carrot or zucchini. All of these sound yummy to me!
After filling all the potato cases, I had a fair bit of mixture left over. So I added a tin of tuna to it.
This then became B1 and B2′s dinner that night and enough for lunch the next day. They loved it, so I have now found a new recipe for them too. This mix now consists of the cheese sauce, potato, mushrooms, tomato, spinach and tuna. Something I will make for them again.
