{Recipe} Easy Oven Baked Meatballs

I have been trying to think up some more finger food ideas for B1 and B2 that contain meat and vegetables. This morning I decided to  make some meatballs with the turkey and veal mince that I bought on special a few days ago.

Only having made Meatballs a few times (most of the time when we have cooked meatballs I have just bought the pre-made ones from the supermarket), I Googled meatballs and glanced over a few recipes to refresh my memory. They were all generally the same with only a few different ingredients added here and there such as herbs or spices. So I went for it and made it up as I went.

Ingredients:

500 gms mince (I used Turkey and veal mince, but you could use beef or chicken)

1 cup Breadcrumbs

1 Egg

1 carrot, diced or grated

1 celery stick, diced or grated

1 mushroom diced

Method:

Preheat oven at 280 degrees.

Combine all ingredients in a bowl and mix well.

Spray baking tray with cooking spray.

Using your hands roll mixture into little balls and place on tray.

Bake in the oven for approx 20 minutes or until golden and cooked through.

Allow to cool and enjoy!
