{Recipe} Mixed Berry Pancakes
These were a massive hit with the twins. They devoured them. Hubby liked them too. I made a big batch and froze some. Perfect for breakfast or a snack.
Ingredients:
1 cup of wholemeal flour
1 tablespoon of sugar
1 teaspoon of baking soda
1 egg
1 cup of milk
As many berries as you want to add. I used Sara Lee frozen mixed berries.
Method:
Mix all dry ingredients in a bowl.
Add egg and milk. Mix through.
Defrost berries and stir into the mixture.
Heat fry pan and spray with cooking spray.
Spoon mixture into warm pan.
Flip when bubbles appear.
Enjoy……..
Freeze in zip lock bags or in containers with grease proof paper between each layer of pancakes.
