The first birthday party and cake
We always wanted to have a party for DD’s first birthday. Not only was it a celebration of her first year but also that we’d survived our first year of being parents. It was always going to be low-key. A bbq in the park with close friends and family. We soon discovered, however, that even a small bbq in a park required a whole lot of organisation.
Firstly, I had grandiose ideas that I would bake a special cake. I can follow a recipe.. I can bake.. it should be a piece of cake (excuse the pun). I take my hat off to any talented cake decorators. I totally underestimated how long this would take. I was still icing it an hour before the party started.
The cake: (not exactly as I had envisioned but it got good reviews).
Advice I should have taken from other mums I’d spoken to, is to make the cake a few days early and ice it when frozen. I found that the cake was quite crumbly as I tried to spread the butter cream icing.
The recipes I used:
The cake: White Chocolate Mud
Butter Cream Icing:
175g Icing Mixture
1 tbs melted butter
water to make it to the consistency you require
(colour and flavouring if desired).

I was up for hours the night before and icing it was the worst. The things we mums do huh?! For his 2nd birthday I think he got a mud cake from Woolies.
